Purple Sweet Potatoes With Beans

 Baked purple sweet potatoes with beans

Baked Purple Sweet Potatoes With Black Beans and Salsa

  • Servings: 4
    Prep time: ~10 minutes
    Cook time: 45–60 minutes

Ingredients

  • 4 Medium Purple Sweet Potatoes
  • 1 Can (15 Oz) Black Beans, Rinsed and Drained
  • 1 Cup Salsa (Mild, Medium, or Spicy)
  • ¼ Cup Chopped Fresh Cilantro (Optional)
  • 1 Avocado, Diced (Optional)
  • Salt and Pepper to Taste
  • Lime Wedges (Optional)


(This recipe works the same with purple sweet potatoes as with regular sweet potatoes.)

  • Preheat the oven to 400°F (200°C).
  • Prepare the sweet potatoes:
    • Wash and pierce each potato several times with a fork.
    • Place on a baking sheet.
  • Bake for 45–60 minutes, until tender when pierced with a fork.
  • Heat the beans:
    • Warm black beans in a saucepan over medium heat.
    • Stir in the salsa and heat for 2–3 minutes.
  • Assemble:
    • Slice open each baked sweet potato and fluff the inside with a fork.
    • Spoon the black bean–salsa mixture on top.
    • Add cilantro, avocado, lime juice, salt, and pepper if desired.

  • Protein: ~12 g
  • Carbohydrates: ~42 g
  • Fiber: ~14 g
  • Fat: ~1 g (without avocado)
  • Sodium: ~516 mg
  • Iron: ~3.1 mg
  • Calcium: ~101 mg
